A YUMMY APPETIZER
Fresh asparagus stalks, thicker than
the ones pictured for a prettier look
Flavored cream cheese or Boursin
cheese
Thin slices of prosciutto ham
Wash asparagus stalks. Snap off the woody stem
ends. Simmer in a skillet over medium heat for about 5 minutes, or microwave on
"high" with a few tablespoons of water in a dish. The asparagus should be
bright green and crisp-tender, not floppy-dry. Dry on a paper towel.
On a cutting board, lay out thin pieces of
prosciutto, and spread just a teaspoon or so of cream cheese or Boursin on each
piece.
Lift each
asparagus stalk and roll up in the prosciutto. You can roll it diagonally to
cover more of the asparagus.
Arrange on
a plate or tray. Looks great in a circular pattern. Serve cold or cool.
