HOT DIGGITIES

 

 

§   Good way to use up the last few hot dogs in a package, and the last few hamburger buns in your pantry, too; makes a tasty, filling lunch or dinner sandwich

§   Saucepan with lid; mixing bowl; foil

§   Prep time: about ½ hour to hard-boil the egg; another 5 minutes to prepare the sandwich

§   Preheat oven to 400 degrees

§   Makes 4 large or 6 medium sandwiches, depending on bun size

§   Team with fresh veggie sticks for "snap," and a piece of fruit

 

 

HOT DIGGITY DOGS! HOT DOGS ARE JUST AS TASTY SLICED!

 

 

1 C. cheddar or American cheese, grated

1 C. hot dogs, sliced into rounds (about 4)

1 egg, hard-boiled and chopped

¼ tsp. Worcestershire sauce

1/8 C. pickle relish (or about 4 T. chopped pickles, onions or both combined)

1 T. ballpark mustard (note: if you don't like pickle relish and mustard, use about 3 T. ketchup instead)

4-6 hamburger buns (can also use brown-and-serve sesame buns)

 

To hard-boil eggs, put eggs (week-old or older work best) in a saucepan and fill water to at least one inch over the egg. (Even though this recipe calls for only one egg, might as well make several at a time and use the others for egg salad sandwiches, slice over a salad, etc.)

 

Drop in a few shakes of salt or just a dash of vinegar to make them easier to peel.

 

Put the lid on the saucepan. Bring to a boil over medium heat. When you can hear the water boiling, let it boil for a minute or two. Then move the pan to a burner with NO heat on, but leave the lid on. Let cool for 20-25 more minutes.

 

To test for doneness, fish one egg out of the water with a large spoon, and, using both hands, see if it will "spin" on the kitchen counter, with one end up. If it wobbles badly, put it back in the hot water for another 5 minutes and replace lid. If it spins nicely, pour out the hot water, replace with cold water, and let the eggs sit for Let sit for 5 minutes, then peel.

 

Now let's make the Hot Diggities:

 

Preheat oven to 400 degrees. In a mixing bowl, combine all ingredients.

 

Tear out a big piece of foil and put the bottoms of the buns close together. With your hands (you DID wash them before you started, didn't you?!?) divide the Hot Diggity mixture onto the buns. You might have to kind of "pile" it on. Put the tops back on.

 

Wrap in foil and bake at 400 degrees for 10 minutes.
