
LUMBERJACK'S OATMEAL

Best to soak steel-cut oatmeal in water overnight in the refrigerator

MAKING THIS
IS EASIER'N FALLIN' OFF A LOG:
Steel-cut oatmeal (available in many grocery stores now, as well as
health-food stores) or quick-cooking rolled oats
Slice or two of apple, cut in
bite-sized chunks
Handful of whole walnuts or raw
almonds
Handful of dried cranberries
A few shakes of cinnamon, or
cinnamon-sugar
A splash of half 'n' half or milk
Some people like natural maple
syrup, too
Here's a
wholesome, stick-to-your-ribs breakfast idea with a high fiber content. Often
called "Irish Oatmeal" or "Overnight Oatmeal," the convenience of the microwave
has reduced the cooking time from 30 minutes (stovetop) to 30 seconds.
Measure ¼
C. steel-cut oats the night before and mix with ¾ C. water in a microwave-safe
bowl. Cover with plastic wrap and place in the refrigerator.
The oats
will absorb the water overnight. Next morning, remove the plastic wrap, place a
paper towel on top of the bowl to catch spatters, and microwave on high for 30
seconds.
Have fun
experimenting with different toppings. Examples: sliced bananas and granola.
If you're
using regular, quick-cooking oatmeal, you can skip the night-before routine and
still have a healthy, filling dish.
