Preheat oven to 400 degrees

Serves 1 per chicken breast
§ Team with Steamed Broccoli with a
squirt of lemon, Quickie Carrots with maple syrup, a bowl of Buttered Noodles,
and Crunchy Tossed Salad

BUT NOT THIS TASTY CHICKEN
ENTRÉE:
1 skinless, boneless chicken breast
1-2 T. unsalted butter
1-2 T. Parmesan cheese
Cooking spray
Roasted red peppers (out of a jar,
warmed in microwave) for garnish if you wish
Preheat
oven to 400 degrees.
Melt butter
in small bowl in the microwave. Put Parmesan in another small bowl.
Spray-coat
baking dish with cooking spray.
Dip chicken
breast in melted butter, and then coat with Parmesan. Place in prepared baking
dish. Drizzle remaining butter and Parmesan on top.
Bake in
400-degree oven for 20 to 30 minutes, or until brown.
You can
heat some roasted red peppers in a small dish in the microwave and place on top
for color and garnish.
